High-Protein Vegan Chili with White Beans

Ingredients:

  • 1 tablespoon
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 red bell pepper, chopped
  • 1 green bell pepper,1 chopped
  • 1 can (15 ounces) crushed tomatoes, undrained
  • 1 can (15 ounces) kidney beans, rinsed and drained
  • 1 can (15 ounces) white beans, rinsed and drained
  • 1 cup vegetable broth
  • 2 tablespoons chili powder
  • 1 teaspoon cumin
  • 1/2 teaspoon cayenne pepper
  • Salt and pepper to taste
  • Fresh cilantro, for garnish

Instructions:

  1. Sauté the Vegetables:
    • in a large pot over medium heat.
    • Add onion and garlic, cook until softened.
    • Add bell peppers and cook until softened.
  2. Add the Wet Ingredients:
    • Stir in crushed tomatoes, kidney beans, white beans, and vegetable broth.
  3. Season the Chili:
    • Add chili powder, cumin, cayenne pepper, salt, and pepper.
  4. Simmer and Serve:
    • Bring to a boil, then reduce heat and simmer for 20-30 minutes, or until thickened.
